Homemade Tomato Soup with Croutons
There is nothing perhaps quite so comforting as a warm bowl of homemade tomato soup when the weather turns chilly! This soup is fragrant, a little spicy, and oh-so-delicious. Plus it’s easy to make.
This recipe makes enough for two or three people but you can double the ingredients if you have more mouths to feed. Infusing the olive oil with red pepper flakes and basil, plus the addition of cinnamon, cocoa powder, and miso gives this soup a complex, satisfying taste. Topped with buttery croutons and a little oat milk, it’s perfection.
